How do I add a password?
Is it possible to password protect the pdf files so that the person I email these to can not copy or alter my work?

Realistically, the only way you can protect your content 100% is to never share it.
Even with full blown Acrobat, high security, password protect, no printing. IF someone really wanted to, they could open your pdf in one window, and a word processor in another and re-type everything. Depending on what your document is, like a screenplay or novel or other creative work, there are a lot of guilds where you can pay to register your work prior to sending it out. It doesn't stop you from getting ripped off, but with the registration and date with a guild, and the documetation that you provided your work to the person in question, you've got the foundation for lawsuits |

realistically tho, it's cheaper for the reciever to buy the work from you than steal it.
Academic works are another issue. |
